Chef:  Valerio Castellano

La Villanella

Valerio Castellano was born in Rome, Italy. As a child he was a difficult eater and when his parents thought he was old enough to handle pots and pans they told him he was own his regarding food. He discovered that cooking was not only a necessity for him but also a pleasure and a creative way to express himself.

In 1988 he graduated from the University of Rome with a degree in Economy and Business.

His cooking reflects a big Tuscany influence because he spent part of his life working and enjoying summers at his parent’s beach house in a small village on the coast.

At an early age he started working for free in restaurants just for the pleasure of it and the experience. He discovered that the combination of creating something that people were able to eat and make them very happy about it was his goal and pleasure.

Eventually he started working, in paying positions, at restaurants in Rome and Porto Santo Stefano and as a private chef and culinary instructor. In 1997 he moved to the United States and he created his company La Villanella. He appeared in 2003 on ABC “Life with Bonnie” as a guest chef and on Extra Extra. Valerio teaches cooking classes in a culinary academy (Chefmakers) in Los Angeles and had the experience to execute dinners for several Hollywood celebrities.

Valerio does private dinner parties for any occasion and cooking and wine classes providing what a regular catering company can’t: incredible authentic Italian dishes made expressly for you in the comfort of your home.

"My way of cooking is simple yet sophisticated. I believe the main ingredient of a dish should be the focus of the dish, not the sauce or spices on it. This is the typical authentic Italian way to cook: quality of the ingredients. I love to improvise new dishes, combining flavors and wines." Wines also happen to be another passion of Valerio's!

He divides his time between his businesses in Chicago and Los Angeles.
